Uniamo 2026: the program for the third edition

From January 15th to 18th, four days of dinners, meetings and cross-fertilizations in the contemporary tavern.

Uniamo – Unconventional Wines and Dinners unveils the full schedule for its third edition, scheduled in Palermo from January 15th to 18th . A multifaceted journey through restaurants, bakeries, pizzerias, and trattorias, bringing together chefs, winemakers, thinkers, and artisans of taste in a series of dinners, convivial gatherings, and cultural encounters.

The heart of this edition’s project is the contemporary tavern , intended as a lively, open, inclusive place, where food becomes a common language and a tool for relationships, which takes shape through a busy schedule of events involving the venues of the Virga&Milano group – Gagini, Buatta, Aja Mola, Maison Bocum and the new Fonderia – alongside “friendly” restaurants and spaces that share the same kaleidoscopic vision of food and conviviality: Bebop, CiCala, Forno Santa Maria and Terrazze Santamarina.

Alongside cuisine, Uniamo opens its gaze to other languages: music, thought, and culture. The presence of Gae Saccoccio , a wine philosopher, and Maurizio Blatto , an observer and interpreter of international musical trends, enrich the program with insights and reflections that transcend the food, reinforcing the event’s identity as a space for discussion and cross-fertilization.

Each day unfolds like a choral narrative: from Maison Bocum’s signature breakfasts, designed as moments of lighthearted encounters, to evening dinners that unite diverse styles, regions, and sensibilities. Wine accompanies and complements the conversation, featuring some of the most interesting names in the Italian wine scene.

The journey will conclude on Sunday, January 18th with a grand finale party at the Fonderia , Uniamo’s symbolic home and a place destined to become a hub for debate on the future of food and beverage. A convivial and collective moment that celebrates the spirit of the initiative: being together, sharing, and imagining new ways of being a community around the table.
